Chicken and Beans

Everyday Food style. i made this for dinner a few nights ago, and am having leftovers tonight. another super easy slow-cooker meal.

also-i just used what i already had (such as chicken breasts for chicken thighs, white onion for red onion, green bell pepper for red or yellow).

ingredients are:
1 cup dried pinto beans
1 11oz. jar of salsa (i used Newman's Own hot)
2 Tbs. chopped chipotles in adobo (i used a tinge more)
2 Tbs. flour
1 cup water
mix all of this together in the bottom of the crock pot, then layer on 1 1/2 lbs chicken (thighs DO taste better) seasoned with salt and pepper
then 1 onion, chopped
1 bell pepper, chopped

cook on low for 8 hours, then remove chicken, shred, and return to stew. serve with sour cream and cilantro, or as i did....

over pearl rice

delish!
