Chocolate Coconut Macaroons

made these last night. another quick and easy cookie from Martha Stewart's Cookies.

weighing 4 oz semisweet chocolate

the rest of the ingredients-
2 2/3 cups sweetened coconut
1 Tbs sugar
2 large egg whites
1/4 cup unsweetened cocoa powder, sifted
1 tsp vanilla

melting the chocolate in a heat proof bowl over simmering water (don't let the water touch the bottom of the bowl)

all melted-let cool

added the cocoa powder to the coconut

then the egg whites and vanilla and sugar

then the melted chocolate and a pinch of salt (i used kosher)

place on the silpat in 1 1/2 Tbs piles, about an inch apart, and bake at 325 degrees for about 17 minutes, rotating the sheet halfway through.

we just got these boxes in at work-a bit picnicy, so maybe a little premature for the 35 degree nights we are having.
