so it's not REALLY peasant food, since ham was probably too expensive. I'm sure, however, that if you threw in some trotters or tripe instead of the ham, you would be in business. or serfdom.
anyway, last week after Thanksgiving (due to some major ham eaters, we have turkey AND ham on Thanksgiving) i brought home some leftovers of said ham and made a super easy one pot meal that is guaranteed to chase away any chill.
|cubed some organic potatoes (again, I'm loving the recent price drops in organic produce) and filled the pot with enough water to cover by maybe an inch.|
|chopped some organic carrots (a good scrubbing is all they need-you don't even have to peel!)|
|threw the carrots in and heated until the pot boiled.|
|reduced the heat a little, added the ham when the potatoes were fork tender.|
|last comes the cabbage, salt, and lots of black pepper.|
|the broth thickens up nicely.|
|hearty and warming. and it's even better the next day.|
