T's Nuts

several weeks ago my friend Tina made these uber delish Sweet and Spicy Rosemary Nuts for the bake sale we held at work. she kindly shared the recipe, and i made a batch (the first of many) for a little get together i had this weekend. now I'll share it with you!
Sweet and Spicy Rosemary Nuts

* Vegetable oil to coat pans
* 4 cup nuts, toasted, no salt added (any mixture - i used peanuts, almonds, cashews, and walnuts)
* 1 cup (packed) dark brown sugar
* 1/2 cup coarsely chopped FRESH rosemary
* 1 tablespoon coarse kosher salt
* 8 dashes of hot pepper sauce (cholula, tabasco, whatevs...)
* 2 tablespoons honey or agave
* 1 tablespoon olive oil

quickly toasted all the nuts before mixing with the rest of the ingredients. i think the heat helps them to coat when you mix them in the bowl.

thankfully my rosemary plant is needing frequent trimming right now.

everything mixed together-make sure you break up all of the lumps of brown sugar.

pour into an oiled baking dish and place in a 350 degree oven, stirring every 5 minutes, for about 15-25 minutes, or until the sugar melts and coats the nuts. be sure to keep the nuts hot by only pulling out the rack enough to stir them quickly, and them sliding them right back in.

poured out onto parchment paper to cool completely. once cool, you just sort of break them into manageable clumps. i cannot stress enough HOW GOOD THEY ARE! and since they keep quite well, they make a great gift. you can make great big batches and hand out Nut Sacks (as Miss Particular Style, not i, would say) to all of your friends.
