have been on a major motivational rush today, so i stopped quickly to make something fast for dinner. it was based on this recipe from Everyday Food....but i didn't have all of the ingredients. i did, however, grab a package of mixed mushrooms at the grocery today, which made it super tasty.
now i must dash....before i start to procrastinate again.
|started by melting a Tbs of butter and sauteing the onion (one small yellow onion) until soft. then you would add the white wine, if you have white wine.|

|at this point i added a bit of the pasta water (as well as the second Tbs of butter that should go in later) because, with the lack of wine, it was rather dry.|
|eyeballed the amount of ricotta-i used about 1/4 of a cup. another problem with not really following a recipe is guessing on amounts...i kept the butter the same, but the amount of mushrooms and ricotta was less than what is called for in the recipe.|
|added the lemon juice and a little more pasta water to thin it out.|
|looks nothing at all like the picture accompanying the recipe, indeed, it looks like a sloppy tuna noodle casserole. however, it tasted really, really good.|
