i made these for Easter-a basic, quick, and easy side dish. i sort of adapted a recipe, but have also done it with the addition of some cayenne and cilantro (it was in Everyday Food somewhere...i can't find the recipe).

|anyway, a little more than 1/4 cup of orange juice, four tablespoons light brown sugar (not packed-the recipe called for four to one pound of carrots. i did more than a pound and thought they tasted fine without adding more sugar).|
|almost 2 Tbs of butter (unsalted).|
|then just stir it all together in the pan until the orange juice reduces a bit, and the sugar dissolves. oh, and i added some salt....|
