Molly Moocher Monday (Meatless Monday)

Fine, you caught me. I had no idea whatsoever that Morel mushrooms were called "Molly Moochers" (mostly in parts of West Virginia). But after i found out, how could i NOT use that name? It's that time of year again, and everyone who is lucky enough to have their own, top secret place for hunting Morels is at it-and i am lucky enough that my co-worker Brent is one of those people. If you see one of those trucks on the corner with a sign advertising Morels, i urge you to stop and buy some. They are always much more than one would usually pay, but they are worth it!

a large handful of gifted Morels-thanks, Brent!
roughly chopped
half a small onion in about two Tablespoons of butter.
tossed in the mushrooms, salt, pepper, and splash of half and half.
poured over rotini with LOTS of fresh parsley from the garden and dinner was done! extremely delicious!
