In April of 2010 (when my little blog was only a couple of months old) I shared a recipe for Thai chicken that my friend Erin had posted on her blog (she has a new blog that you can follow here-it is all about what she is cooking from her weekly CSA deliveries), and i made it again yesterday. It is very easy and very, very yummy, so i thought it was worth a second look. I believe Guy has made this subbing shrimp for the chicken-just another little idea for you.
|Start with one large white onion, chopped. Layer 2.5 lbs of chicken over this (i only used about 1.75 lbs and it was enough).|
|Mix together 1 cup of salsa (as hot as you want it), 1/4 cup of peanut butter, 1Tbs. soy sauce, 1 tsp grated fresh ginger, and 2 Tbs. fresh lime juice (i used the juice of two limes, as they were rather small).|
|Served on white rice with cilantro, lime wedges, and crushed peanuts. Super delish!!! Thanks again, Erin!|
