Thai Chicken...Worth a Second Look

In April of 2010 (when my little blog was only a couple of months old) I shared a recipe for Thai chicken that my friend Erin had posted on her blog (she has a new blog that you can follow here-it is all about what she is cooking from her weekly CSA deliveries), and i made it again yesterday. It is very easy and very, very yummy, so i thought it was worth a second look. I believe Guy has made this subbing shrimp for the chicken-just another little idea for you.

Start with one large white onion, chopped. Layer 2.5 lbs of chicken over this (i only used about 1.75 lbs and it was enough).

Mix together 1 cup of salsa (as hot as you want it), 1/4 cup of peanut butter, 1Tbs. soy sauce, 1 tsp grated fresh ginger, and 2 Tbs. fresh lime juice (i used the juice of two limes, as they were rather small).
Pour this over the chicken that is over the onions, and cook on low in the crock pot for, oh, about 8 hours. I ended up leaving mine in for about 11 1/2 and it was fine. Once it is done you can kind of just stir it together and the chicken will fall apart and mix in with the sauce.
Served on white rice with cilantro, lime wedges, and crushed peanuts. Super delish!!! Thanks again, Erin!
