Quick Pasta-Penne with Chunky Vegetable Sauce

This is really a lot like many other pasta dishes I've made by throwing whatever vegetables I had on hand into the pan, but the addition of zucchini was pretty tasty. I used this recipe from the March 2011 Everyday Food, and made it for lunch today. As usual, I had plenty leftover, so some was put in the freezer for an even faster meatless meal in the next few weeks. 

Now, back to Spring Cleaning.


I used mini bellas...because they were on sale.
After the onions are cooked, toss in the zucchini, then mushrooms, then crushed tomatoes.
Add garlic, oregano, salt and pepper. Mmmmm, mmmm good! I used a little more than a cup of pasta water to thin it out.
Super fast. Super easy. Super good.
